There’s something magical about the smell of smoke curling through the air, isn’t there? It instantly transports me back to summer evenings, family gatherings, and the pure joy of a perfectly cooked meal. Today, we’re diving headfirst into a flavor experience that’s been captivating taste buds for generations: Memphis-style ribs, inspired by the legendary Rendezvous restaurant. I’ve always been fascinated by regional American cuisine, and the unique dry-rub approach of Rendezvous has always intrigued me. It’s a departure from the sweet, saucy ribs many of us are used to, and honestly? It’s absolutely divine.
I remember reading about Rendezvous years ago, a tiny, unassuming restaurant tucked away in downtown Memphis, serving up these incredible ribs since 1952. The story of how they came to be – a charcoal grill in a tiny alleyway – just adds to the charm. It’s a testament to the power of simple ingredients and a dedication to doing things right. That’s what I try to embody here on Easy Recipes List: taking classic flavors and making them accessible to everyone. And while recreating a restaurant’s secret recipe is always a challenge, this [memphis rendezvous ribs recipe] is a fantastic starting point, and I encourage you to make it your own!
The key to these ribs, as with any good barbecue, is patience. It’s a low and slow process, but trust me, the reward is so worth it. Don’t rush the smoking process; that’s where all the incredible flavor develops. And don’t be afraid to experiment with your wood choice – maplewood is classic, but hickory or pecan would also be wonderful. I’ve been playing around with different rubs too, trying to get as close to that Rendezvous magic as possible. This [memphis rendezvous ribs recipe] uses a fantastic base, and you can adjust the spices to your liking.
I think one of the most satisfying parts of cooking is the transformation of simple ingredients into something truly special. Watching the ribs slowly cook, absorbing the smoke, and becoming incredibly tender… it’s a beautiful thing. It’s a reminder that good food takes time, and that the effort is an act of love. And that’s really what “Cooking with Care, Sharing with Joy” is all about. This [memphis rendezvous ribs recipe] is a perfect example of that philosophy. It’s a dish meant to be shared, enjoyed with friends and family, and savored with every bite. I’ve been making this [memphis rendezvous ribs recipe] for potlucks and family gatherings, and it’s always a hit!

- Total Time: 6 hours 30 minutes
- Category: Meat Recipes
- Cuisine: American
Ingredients
2 racks Spare Ribs
½ cup Barbecue Rub (I used Rendezvous BBQ Rub or Rub of Choice)
4 Tbsp Vegetable Oil
1 cup Water
1 cup Distilled White Vinegar
4 Tbsp Barbecue Rub (I used Rendezvous BBQ Rub or Rub of Choice)
½ cup Barbecue Sauce (I used Rendezvous BBQ Sauce or BBQ Sauce of Choice)
Instructions
Preheat the grill to 225 degrees F (105 degrees C). Add some chunks of maplewood with the hot coals for smoking.
Remove the membrane from the Spare Ribs (2 racks). Rub them with Vegetable Oil (4 Tbsp) and then the Barbecue Rub (½ cup).
Grill for 1 hour, then prepare the mop sauce.
Mix together the Barbecue Rub (4 Tbsp), Barbecue Sauce (½ cup), Water (1 cup), and Distilled White Vinegar (1 cup) to create mop sauce. Heat the sauce on a stovetop until combined.
Mop the sauce on the ribs and continue to cook for another 3 ½ hours. Make sure to mop the sauce every 1 hour on the ribs.
With a toothpick, pierce the meat in different places. If it goes all the way through, then the ribs are done.
Remove the ribs from the grill and place them on a tray. Wrap aluminum foil around the ribs and let them rest for 30 minutes. Serve with sauce of choice and enjoy!
Notes
Using a meat thermometer is always a good idea to ensure the ribs are cooked to a safe internal temperature.
Feel free to adjust the amount of rub and sauce to your preference. Some people like a heavier coating, while others prefer a more subtle flavor.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
Don't be afraid to experiment with different wood types for smoking!
