Ingredients
  

  • 2 racks Spare Ribs
  • ½ cup Barbecue Rub (I used Rendezvous BBQ Rub or Rub of Choice)
  • 4 tablespoon Vegetable Oil
  • 1 cup Water
  • 1 cup Distilled White Vinegar
  • 4 tablespoon Barbecue Rub (I used Rendezvous BBQ Rub or Rub of Choice)
  • ½ cup Barbecue Sauce (I used Rendezvous BBQ Sauce or BBQ Sauce of Choice)

Instructions
 

  • Preheat the grill to 225 degrees F (105 degrees C). Add some chunks of maplewood with the hot coals for smoking.
  • Remove the membrane from the Spare Ribs (2 racks). Rub them with Vegetable Oil (4 Tbsp) and then the Barbecue Rub (½ cup).
  • Grill for 1 hour, then prepare the mop sauce.
  • Mix together the Barbecue Rub (4 Tbsp), Barbecue Sauce (½ cup), Water (1 cup), and Distilled White Vinegar (1 cup) to create mop sauce. Heat the sauce on a stovetop until combined.
  • Mop the sauce on the ribs and continue to cook for another 3 ½ hours. Make sure to mop the sauce every 1 hour on the ribs.
  • With a toothpick, pierce the meat in different places. If it goes all the way through, then the ribs are done.
  • Remove the ribs from the grill and place them on a tray. Wrap aluminum foil around the ribs and let them rest for 30 minutes. Serve with sauce of choice and enjoy!

Notes

  • Using a meat thermometer is always a good idea to ensure the ribs are cooked to a safe internal temperature.
  • Feel free to adjust the amount of rub and sauce to your preference. Some people like a heavier coating, while others prefer a more subtle flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
