Understanding the Challenge with Homemade Pizza Dough

Making homemade pizza dough is both creative and technical. Many new cooks find it hard to get the right mix of texture and taste. This can lead to dough that is too heavy or lacks flavor. Even when they measure ingredients carefully, getting the same results every time can be tricky.

Another big challenge is making a crust that tastes like it came from a restaurant. Without tips like choosing the right flour and knowing how much water to use, cooks at home often end up with crusts that are uneven or not very good.

Common issues with texture and flavor

A common problem when making pizza dough is getting the right texture. If the dough is too stiff, it won’t stretch well. If it’s too sticky, shaping it will be difficult. This often happens because of the wrong choice of flour. Bread flour is the best option because it has a high protein content. This helps the gluten develop, which is important for making strong and stretchy dough.

Flavor can also be an issue. Many people forget to add enough salt or use substitutes for important ingredients like active dry yeast, which can make the dough taste plain. To create good pizza, it’s important to let the fermentation process happen. This process helps improve the overall flavor and gives the dough its special complexity.

Hydration levels are important too! If there is too much moisture, the dough can sag. If there isn’t enough, the crust can become dry. Keeping hydration between 60% and 70% will fix many of these problems and lead to fantastic pizza dough.

📖Why My Recipe Works

  • Brine Method- While many cooking websites say that salting, or brining the eggplant, isn't necessary because modern eggplants are less bitter I just don't agree. I find the salt improves both the flavor and texture.
  • Quick and Easy- There are so many delicious ways to make eggplant, but cutting them into slices is perfect for a variety of applications and is much faster than cubes or whole eggplant.

🧾Ingredient Notes

  • Using a kitchen scale for accurate measurements is highly recommended, especially for hydration.
  • If the dough is too sticky, add a tablespoon of flour at a time while kneading.
  • For a crispier crust, preheat your pizza stone or baking steel for at least 30 minutes.
  • Leftover dough can be stored in the refrigerator for up to 3 days.
  • Feel free to experiment with different flours, such as 00 flour for a more authentic Neapolitan-style crust.
  • Don't be afraid to get creative with your toppings!

Ingredients

  • 300g Bread Flour (approx. 2 ½ cups)
  • 210g Warm Water (approx. ¾ cup + 1 tbsp) – between 105°F and 110°F
  • 7g Active Dry Yeast (approx. 2 ¼ tsp)
  • 6g Salt (approx. 1 tsp)
  • 1 tablespoon Olive Oil

Instructions

1 Step 1: In a large bowl, combine warm water and active dry yeast. Let sit for 5-10 minutes until foamy.

2 Step 2: Add salt and olive oil to the yeast mixture.

3 Step 3: Gradually add bread flour, mixing until a shaggy dough forms.

4 Step 4: Knead the dough for 8-10 minutes (by hand or with a stand mixer) until smooth and elastic.

5 Step 5: Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 2 hours, or until doubled in size.

6 Step 6: Gently punch down the dough and divide into 2-3 portions, depending on your desired pizza size.

7 Step 7: Shape each portion into a ball and let rest for 15-20 minutes.

8 Step 8: Stretch or roll out the dough to your desired thickness.

9 Step 9: Top with your favorite ingredients and bake in a preheated Ooni oven (900°F) for 60-90 seconds, or in a preheated home oven (500°F) with a pizza stone for 12-15 minutes.
