Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme 
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
  • Place chicken breasts in a baking dish and pour marinade over them, ensuring they are evenly coated.
  • Bake for 25-30 minutes, or until chicken is cooked through and internal temperature reaches 165°F (74°C).
  • Let rest for 5 minutes before serving.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes (or up to overnight) in the refrigerator.
  • Serve with roasted vegetables, mashed potatoes, or a fresh salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Feel free to substitute your favorite herbs! Oregano and parsley also work beautifully.
