Hello friends! There’s something truly magical about a cozy night in, especially when it involves a comforting, flavorful meal. Lately, I’ve been completely captivated by the idea of bringing a little bit of the Italian countryside to my kitchen, and this tuscan chicken recipe is exactly how I’ve been doing it. It’s a dish that feels both special and incredibly approachable – perfect for a weeknight dinner or a relaxed weekend gathering.
I remember the first time I stumbled across a similar recipe online. It was a rainy Portland afternoon, the kind where you just need something warm and inviting. I was immediately drawn to the promise of creamy sauce, sun-dried tomatoes, and that beautiful, vibrant green of spinach. It felt like a hug in food form. And honestly, it delivered. I’ve tweaked and experimented with it over the years, always striving for that perfect balance of flavors. This tuscan chicken recipe isn’t about complicated techniques; it’s about letting good ingredients shine.
It’s funny, isn’t it, how a simple dish can evoke such strong memories? My grandmother used to make a similar sauce, though hers was more focused on the spinach and garlic. She always said cooking was an act of love, and I think that sentiment really resonates with me. It’s about taking the time to nourish yourself and those you care about. And this tuscan chicken recipe is definitely a labor of love, but a wonderfully easy one!

One of the things I love most about this recipe is its versatility. You can easily adapt it to your preferences. Don’t love spinach? Kale works beautifully. Want a little more heat? Add a pinch of red pepper flakes. The beauty of cooking is that it’s a creative process, and you’re always encouraged to make it your own. I’ve even seen variations with mushrooms and artichoke hearts – sounds delicious, doesn’t it?
The key to a truly exceptional tuscan chicken recipe lies in building layers of flavor. Starting with a good sear on the chicken is crucial. It creates a beautiful golden crust and locks in all those delicious juices. Don’t be afraid to let it get a little browned – that’s where the magic happens! And then, the sauce… oh, the sauce! The combination of sun-dried tomatoes, garlic, and cream is just heavenly. It’s rich, decadent, and utterly irresistible.

I also want to mention the importance of quality ingredients. Whenever possible, I try to source local, seasonal produce. It just tastes better, and it feels good to support local farmers. For the sun-dried tomatoes, I recently found a fantastic jar at the Portland Farmers Market – they were bursting with flavor! And of course, freshly grated Parmesan cheese is a must. It makes all the difference.

And finally, don’t rush the process. Cooking should be enjoyable, a moment to slow down and connect with your food. Put on some music, pour yourself a glass of wine, and savor the experience. Because at the end of the day, that’s what it’s all about – cooking with care, sharing with joy. This tuscan chicken recipe is a perfect example of that.

Bring a little bit of the Italian countryside to your kitchen with this comforting and flavorful Creamy Tuscan Chicken recipe. It's perfect for a weeknight dinner or a relaxed weekend gathering.

  • Author: Emilia Hayes
  • Prep Time: 15 minutes
  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Ingredients

Scale

4 (6-ounce) boneless skinless chicken breasts

1 teaspoon Italian seasoning

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

3 tablespoons extra virgin olive oil

4 garlic cloves, minced

¼ cup finely chopped yellow onion

½ cup sun-dried tomatoes, thinly sliced

2 cups baby spinach

1 ½ cups heavy cream

¼ cup freshly grated parmesan cheese

Instructions

  1. Season both sides of each chicken breast with Italian seasoning, salt, and pepper.
  2. Heat 2 tablespoons of the oil in a large skillet over medium heat. Add the chicken and sear for 3 to 4 minutes on each side, until golden. Remove the chicken from the pan and set aside.
  3. Add the remaining 1 tablespoon of oil to the skillet. Add the onion and sauté for 2 to 3 minutes, until softened.
  4. Add the sun-dried tomatoes and garlic and sauté for another minute, until fragrant.
  5. Add the spinach and sauté for another minute, until just starting to wilt.
  6. Add the heavy cream and parmesan cheese, stir together, and bring to a simmer.
  7. Place the chicken back in the skillet and cook until heated through, about 5 minutes.

Notes

  • For a dairy-free option, substitute the heavy cream with coconut cream or cashew cream. Nutritional yeast can be used in place of Parmesan cheese.
  • If your chicken breasts are very thick, you may need to pound them to an even thickness for faster cooking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
  • Serve over rice, pasta, mashed potatoes, or polenta for a complete meal.
  • Don't be afraid to experiment with adding other vegetables, like mushrooms or artichoke hearts!
