5 quarts popped popcorn

1 cup butter

2 cups brown sugar

1/2 cup corn syrup (or honey/maple syrup for variation)

1 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 250Β°F (120Β°C). Place popcorn in a very large bowl.
  2. In a saucepan over medium heat, melt butter. Stir in brown sugar, syrup, and salt.
  3. Bring mixture to a boil, stirring constantly. Then stop stirring and let it boil for 4 minutes.
  4. Remove from heat and quickly stir in vanilla and baking soda.
  5. Pour caramel in a slow stream over the popcorn, stirring gently to coat evenly.
  6. Divide coated popcorn between two shallow baking pans.
  7. Bake for 1 hour, stirring every 15 minutes.
