These bite-sized wonders are light, airy, perfectly golden, and dusted with powdered sugar. They’re so easy to make, you’ll be kicking yourself for not having tried them sooner.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon granulated sugar
  • 1 egg
  • 3/4 cup milk
  • 1/4 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Oil for frying (vegetable or canola work best)

Instructions

  1. In a medium bowl, whisk together the flour, salt, baking powder, and sugar.
  2. In a separate bowl, combine the egg, milk, and vanilla extract.
  3. Slowly add the wet mixture into the dry ingredients, stirring until the batter is smooth and lump-free.
  4. In a deep skillet or pot, heat oil until it reaches 350°F (175°C).
  5. Using a spoon or small cookie scoop, carefully drop spoonfuls of batter into the hot oil.
  6. Fry each batch for 2-3 minutes, flipping halfway through to ensure even browning.
  7. Remove the bites with a slotted spoon and place them on a paper towel-lined plate to drain.
  8. Dust generously with powdered sugar and serve immediately.

Notes

  • Don’t overcrowd the pan – fry in small batches for best results.
  • Adjust the amount of powdered sugar to your liking.
  • For a fun twist, add a pinch of cinnamon to the batter.
  • Store leftovers in an airtight container at room temperature for up to 2 days, but they’re best enjoyed fresh!
